The Red Quinoa & Apple Waldorf Salad is a healthy, gluten-free, and vegan twist on a traditional recipe.

    1 cup red quinoa – cooked to yield 2 – 3 cups
    3 stalks of celery, diced
    2 large red-skinned, crisp apples, cored and diced with peel
    ½ cup coarsely chopped fresh Italian parsley
    ½ cup chopped walnuts
    1/3 cup raisins
    Waldorf Salad Dressing:

    2 tbsp extra virgin olive oil
    1 fresh squeezed lemon or lime
    1 tsp brown sugar or maple syrup
    ¼ tsp salt
    ¼ tsp pepper
    ¼ tsp cinnamon
    1/8 tsp cardamom
    ¼ tsp allspice

Directions
