Coconut shrimp with sweet chili sauce
A hamburger consists of a cooked patty of ground meat, seafood, or vegetarian foods, usually placed between two slices of a bread roll. Hamburgers are often served with lettuce, bacon, tomato, onion, pickles, cheese, and condiments such as mustard, mayonnaise, ketchup, and relish. There are many types of burgers with significant variations.

Coconut cream pie  Print Recipe

Serves: 8

Preparation time: 20 minutes

Cooking time:20 minutes


1 Prepared 9-inch pie shell

FOR THE FILLING:
2 cups milk
3 egg yolks
½ cup/100 grams sugar
½ teaspoon salt
2 ½ tablespoons/20 grams cornstarch
1 tablespoon butter, melted
½ teaspoon vanilla
1 cup/98 grams sweetened, flaked coconut

FOR THE MERINGUE:
½ cup/49 grams unsweetened coconut
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons/75 grams sugar Partially blind-bake the pie shell: Heat oven to 425 degrees. Roll out chilled pie dough and place in a 9-inch pie pan. (Glass is best.) Trim and flute or crimp the edges, pierce the bottom crust with a fork. then cover with a large square of parchment or foil. It should hang over the edges. Carefully pour 2 or 3 cups of dried beans or pie weights onto the foil or parchment, and spread evenly so they reach up the sides of the pie. Bake 12 to 16 minutes or until crust is lightly browned. If crust edges are browning too quickly, make a little collar from foil and cover for remaining baking time.
Make the filling:
Scald milk by placing it in a saucepan over medium heat. Stir frequently until it just begins to foam and bubble around the edges. Set aside to let cool slightly. In the top of a double boiler, or in another saucepan that will fit over a pot of boiling water, beat together egg yolks, sugar, salt and cornstarch. Stir in melted butter, then add the milk.
Place the saucepan over the boiling water and whisk until the mixture thickens. This will take 2 to 5 minutes. Remove from heat, stir in vanilla and sweetened coconut until well distributed. Pour into the pie shell.
Make the meringue: Toast the unsweetened coconut lightly in a small sauté pan on the stove over medium heat, stirring frequently to prevent burning. Set aside. In a stand mixer or with a bowl and whisk, mix egg whites and cream of tartar until the mixture is foamy. If using a stand mixer, keep speed on medium. Then, turn mixer to high and gradually pour in sugar, a tablespoon at a time. If whisking, make sure sugar is dissolved before each new addition of sugar. Keep beating until the meringue is glossy and forms soft peaks. Be careful not to whip into stiff peaks.
Pour the meringue over the pie filling. Using a spatula (an offset version works well), scoot the meringue to the edge of the crust so it forms a seal. Swirl the spatula through the rest of the meringue, distributing it evenly and dipping the edge of the spatula across the top of the meringue to make little peaks. Sprinkle evenly with the unsweetened coconut.
Bake 15 to 20 minutes, or until meringue is golden brown. Cool on a wire rack. Refrigerate for at least 3 hours before serving.

Coconut crispies  Print Recipe

1 cup shortening
1/2 cup brown sugar
1 cup white sugar
1 egg
1 cup oatmeal
1 cup flakes coconut
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt Preheat oven to 350 degrees.
Cream shortening with brown and white sugars.
Add egg and mix well.
Combine all dry ingredients and add to the shortening mixture. Spoon the equivalent of 1 teaspoon on greased cookie sheet.
Bake for 12-15 minutes. Transfer cookies on a rack and cool.

Coconut flour pancakes  Print Recipe

Serves: 4

Preparation time:10 minutes

4 large eggs, at room temperature
1 cup coconut milk
2 teaspoons pure vanilla extract
1 tablespoon honey
1/2 cup plus 1 tablespoon (63 gr) coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
Coconut oil
Honey, pure maple syrup, fruit compote for serving
1. Preheat a large skillet or griddle over medium-low heat.
2. Beat the eggs in the bowl of a stand mixer with a whisk attachment at medium speed until frothy. Mix in the coconut milk, vanilla and honey.
3. In a small bowl, whisk together the coconut flour, baking soda, salt and cinnamon.
4. Add half of the dry ingredients to the wet ingredients and beat on medium speed for about 30 seconds. Scrape down the sides of the bowl, then add the remaining dry mixture and beat at medium to medium-high speed for another minute or two, or until the coconut flour is completely mixed into the batter and has fully absorbed the liquid.
5. Grease the heated pan with coconut oil, using a heat-proof silicone brush to spread the oil evenly between each batch). Spoon the batter onto the pan to create pancakes that are 2 to 3 inches in diameter, using the back of the spoon to spread them out. (keep them small for easier flipping.)
6. Cook for 2 to 3 minutes, or until the pancakes are bubbling and well set, then flip and cook for an additional 1 to 2 minutes. Adjust the heat as necessary.
7. Serve hot with your choice of accompaniment.
8. You can freeze the prepared pancakes and reheat them later.

Coconut kisses  Print Recipe

Serves: 10

Preparation time: 20 minutes

5 egg whites
1 tablespoon sugar
1 1/2 cups confectioners' sugar
2 1/2 cups sweetened coconut flakes
1 teaspoon grated lemon zest
1 teaspoon all-purpose flour Preheat oven to 350 degrees.
Whisk the egg whites until frothy. Add the sugar and whisk until stiff but not dry.
Fold in the confectioners' sugar, coconut and lemon zest. Place in a double boiler or in a metal bowl over barely simmering water. Stir constantly until the mixture is hot.
Stir in the flour.
Line two baking sheets with parchment paper. Using heaping teaspoons full of the batter; spoon the cookies onto the baking sheets, placing them 2 inches apart.
Bake until the cookies are golden brown, about 15 minutes. Transfer to a rack to cool.

Coconut shrimp with sweet chili sauce  Print Recipe

1 pound shrimp, peeled and deveined
salt and pepper
1/3 cup flour
2 eggs, lightly beaten
1/2 cup panko breadcrumbs
1/2 cup shredded coconut
oil for frying
Sweet Chili Sauce (See recipe) Season the shrimp with salt and pepper, dredge them in flour, dip them in egg and coat them with a mixture of the breadcrumbs and shredded coconut.
Heat the oil in a large pan over medium-high heat and cook the shrimp until golden brown, about 2-3 minutes, before setting aside on paper towels to drain.

1 1/4 cups graham cracker crumbs
1/2 cup melted butter
2 teaspoons cocoa powder
2 teaspoon sugar
1 14-ounce can condensed milk
2 1/2 cups shredded coconut
1 teaspoon vanilla


Preheat oven to 375 degrees.
Combine the graham cracker crumbs with the butter, cocoa powder and sugar.
Press the mixture in an 8 -inch by 10 -inch pan. Bake at 375 degrees for 10 minutes.
Mix the remaining ingredients. Spread on crust.
Bake at 375 degrees about 15 minutes, or until brown.
Refrigerate until cool. Cut into squares.

Coconut-almond bars  Print Recipe

Serves: 24

4 egg whites
1 1/2 cups sugar
1 teaspoon water
1 teaspoon almond extract
2 teaspoons vanilla
1 cup all-purpose flour
3 cups shredded coconut
48 whole almonds
1/2 cup semi-sweet chocolate chips
3 teaspoons unsalted butter Preheat oven to 350 degrees.
Grease 15 x 10 x 1-inch jelly roll pan. In large bowl, beat egg whites until soft peaks form.
Gradually add sugar; beat until stiff peaks form, about 7 minutes. Add water, almond extract and vanilla; blend well. Lightly spoon flour into measuring cup; level off.
Stir in flour and coconut; mix well. Spread in greased pan. Arrange almonds over top of bars in 8 rows of 6 each.
Bake at 350 degrees for 15 to 20 minutes or until lightly browned and top springs back when lightly touched in center.
Cover pan with foil until cool.
In small saucepan, melt chocolate chips and butter over low heat, stirring occasionally; drizzle over cooled bars.

Corn in coconut milk  Print Recipe

Serves: 5

5 ears corn, shucked and cut into halves
2 (13.5-ounce) cans full fat coconut milk
1 cup water
1 tablespoon salted butter
6 garlic cloves, minced
Leaves from 8 stems thyme
2 culantro leaves or 4 sprigs cilantro, leaves only, finely chopped
20 chives, finely chopped
2 small habanero peppers, stems removed
1/2 teaspoon salt, plus more as needed
1/2 teaspoon black pepper
Shuck the corn.
Rinse each ear under running water and remove any straggling silk fibers that are still hanging on.

Halve the corn:
On a cutting board, use a large chef’s knife and cut the corn into halves. If the corn is small enough you can even just snap it in half using your hands.

Bring the liquids to a boil, then simmer:
In a deep and wide pot, add the coconut milk and water and bring to a rolling boil over high heat.

Add the butter, garlic, thyme, cilantro, chives, habanero, salt, and black pepper. Let it simmer for 10 minutes.


Boil the corn:
Add the corn and let it all simmer on low heat for 20 minutes. Turn the corn every 8 to 10 minutes using metal tongs or a fork. Be careful not to burst the pepper in the simmer liquid if you don’t want it spicy.

You’ll know it’s ready when the coconut milk is reduced enough that it is thick and coats the corn heavily. You don’t want it like a soup, but more so reduced with some gravy.

Serve: Once the corn is cooked remove it from the pot and serve it warm or at room temperature.
Serve coconut milk in bowls and enjoy with the corn. This can be served by itself or as a side dish.

Refrigerate leftovers in an airtight container for up to 1 week.

To reheat, place the corn in the same pot used to cook it and add 2 tablespoons of water. Over medium-low heat, bring to a simmer and heat for 5-10 minutes.

Frosted dream bars  Print Recipe

Serves: 10

A buttertart-like filling between a shortbread base and a lemon glaze.
Base:
1 cup All-purpose flour
1 teaspoon baking powder
1/2 shortening
1 egg
1 tablespoon milk
1/2 raspberry jam

Filling:
2 eggs
1 cup light brown sugar
2 tablespoon flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup chopped walnuts
1/2 cup coconut

Icing:
1 1/2 cups icing sugar
1 1/2 tablespoon lemon juice
1 to 2 tablespoons cream

Base:
Combine flour and baking powder. Cut in shortening until mixture is crumbly. Beat egg and milk together. Add to flour mixture. Mix well.
Press firmly into greased 9 inch square cake pan. Spread jam evenly over crust.
Filling:
Beat eggs and brown sugar in small bowl on medium speed of electric mixer until thick and stiff, about 4 minutes. Stir in remaining ingredients. Spread over jam.
Bake at 350 degrees for 35 to 40 minutes, or until set and golden. Cool slightly then frost while still warm.
Icing:
Combine all ingredients using enough cream to make a spreading consistency.
Spread quickly over slightly warm bars.

Jamaican pumpkin soup  Print Recipe

Serves: 8

Preparation time: 15 minutes

Cooking time:30 minutes


2 pounds peeled pumpkin (about 6 cups)
6 cups chicken broth
1 cup light coconut milk
4 ounce piece pickled or salt pork
1 large onion, chopped
1 clove garlic, minced
2 teaspoons minced fresh ginger
1 bay leaf large
1 sprig thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon salt
hot chile pepper to taste (Scotch bonnet) In large pot, combine all ingredients . Bring to boil; reduce heat, cover and simmer for about 30 minutes or until pumpkin is very soft.
Remove pork, thyme sprig and bay leaf.
In blender, purée soup until smooth. Return to pot and reheat. Add salt and pepper if needed.

Kashmiri lamb curry  Print Recipe

Serves: 6

Preparation time: 20 minutes

Cooking time:2 hours


1 tablespoon olive oil
2 pounds lamb shoulder, cubed
1 large onion, chopped
2 tablespoons hot curry paste
1 (14-ounce can) coconut milk
2 tablespoons tomato sauce
1/2 cup raisins
1/2 cup chopped peanuts
1/2 cup cubed bananas
Serve with rice and curry Heat oil in an oven-proof skillet and brown lamb and onion on high heat.
Stir in curry paste, coconut milk, and tomato sauce. Add water to cover meat. Simmer on low for 1 1/2 hours. Add remaining ingredients.
Simmer until lamb is tender.
Serve with rice and chutney.

Melting moments  Print Recipe

Serves: 12

Preparation time: 20 minutes

1 cup all-purpose flour
2 tablespoons cornstarch
1/2 cup confectioners' sugar
1 cup butter, softened
1 1/2 cups flaked coconut Preheat oven to 300 degrees.
Mix flour, cornstarch, and sugar in a bowl. Blend in butter to form a soft dough.
If dough is too soft to handle, cover and chill.
Shape into 3/4-inch balls.
Roll in coconut.
Place 1 1/2 inches apart on ungreased baking sheets. Bake for 20-25 minutes, or until lightly browned.

Nanaimo bars  Print Recipe

The Nanaimo bar is a dessert item of Canada origin popular across North America. It is a bar dessert which requires no baking and is named after the west coast city of Nanaimo, British Columbia.
bottom layer
1/2 cup butter
1/4 cup sugar
5 tablespoons cocoa
1 egg, beaten
1 3/4 cups Graham crackers crumbs
3/4 cup fine coconut
1/2 cup finely chopped walnuts

second layer
1/2 cup butter
3 tablespoons milk
2 tablespoons instant vanilla custard powder
2 cups icing sugar

third layer
2/3 cup semisweet chocolate
2 tablespoons butter bottom layer:
Melt butter, sugar, and cocoa in a heavy saucepan.
Add beaten egg and stir to cook and thicken. Remove from heat . Stir in crumbs, coconut and walnuts.
Press firmly into ungreased 9 by 9 inch pan.
Second layer:
Cream butter, milk, custard powder and icing sugar together well. Beat until light. Spread over bottom layer.
Third layer:
Melt chips and butter over low heat. Cool. When cool but still runny, spread over second layer. Chill in refrigerator. Cut into 36 squares.

No Bake chocolate cookies  Print Recipe

Fun and easy to make with my kids Enjoy eating and baking them.
2 cups white sugar
1/2 cup half and half or 15% cream
1/2 cup butter
1 teaspoon vanilla
pinch salt
1/2 cup cocoa powder
1 cup coconut flakes
2 cups quick oatmeal
In a thick bottom saucepan, combine sugar, cream, butter, vanilla and salt. Bring to a boil. Let boil for 3 minutes.
Stir in the cocoa powder.
Remove from heat and mix in the coconut and oatmeal.
Line a buttered cookie sheet with spoonfuls of the mixture.
Refrigerate. Store cookies in an airtight container in the refrigerator.

Raspberry squares  Print Recipe

Serves: 8

1 cup all-purpose flour
1 teaspoon baking powder
2 tablespoons icing sugar
1/2 cup butter, melted
1 egg, beaten
1 tablespoon milk
1/2 cup raspberry jam
1 egg
1 cup brown sugar
4 tablespoons melted butter
2 cups angel flake coconut Preheat oven to 350 degrees.
In a large mixing bowl, mix flour, baking powder, sugar and butter. Beat in the egg and milk.
Spoon and press into a buttered 9-inch square pan. Bake for 10 minutes.
Spread raspberry jam over warm crust. In a medium mixing bow, beat the egg with brown sugar, melted butter. Stir in the coconut.
Spoon evenly over raspberry jam.
Bake for about 30 minutes or until lightly brown.

Thai chicken lemon grass coconut soup -tom kai  Print Recipe

This warming soup is a quick and easy recipe to put together on a weeknight yet wonderful for guests when you’re entertaining.
1 small onion, thinly sliced
3 lemon grass stalks, crushed
6 fresh or dried kaffir lime leaves
1 piece ginger, 4 inches (10 cm) long, peeled and sliced
1 piece galangal, 4 inches (10 cm) long,peeled and sliced
7½ cups (1.9 L) chicken broth
2 cans (each 400 mL) coconut milk
2 to 4 tsp (10 to 20 mL) fish sauce
1 to 3 tsp (5 to 15 mL) palm or granulated sugar(optional)
3 boneless skinless chicken breasts,about 1 lb (500 g)
½ red pepper, thinly sliced into strips
⅛ tsp (0.5 mL) salt
¼ lb (125 g) fresh shiitake or button mushrooms,thinly sliced
3 green onions, thinly sliced
1 lime, cut into wedges
½ cup (125 mL) Thai basil leaves or cilantro sprigs for garnish

Place onion, lemon grass, lime leaves, ginger and galangal in a large pot.
Pour in broth.Bring to a boil over medium-high heat. Reduceheat so broth is simmering. Simmer until very flavourful, 20 minutes. Strain into a bowl.

Pour broth back into pot. Stir in coconutmilk. Bring to a gentle boil over medium-highheat. Stir in fish sauce.
Taste and add sugar,if you like.

Meanwhile, thinly slice chicken and red pepper into bite-sized pieces. Sprinkle chicken with salt.
When broth is gently boiling, stir in chicken, peppers, mushrooms and green onions. Bring back to a gentle simmer.
Gently simmer, stirring frequently until chicken is cooked through and vegetables soften, 2 to 5 minutes.
Do not vigorously boil. Divide between bowls. Squeeze a wedge of lime into each.
Serve garnished with basil.
