The health benefits of grapes vary by variety, mainly due to differences in antioxidant content.
Concord grapes

which are dark purple and commonly used in juices, are especially high in resveratrol and anthocyanins, compounds linked to heart health, brain function and reduced inflammation.

Red grapes also contain these antioxidants, though in slightly lower amounts. Green grapes, while still nutritious, have fewer polyphenols and less resveratrol. They also tend to be higher in sugar and lower in antioxidant strength. For maximum benefit, remember: the darker the skin, the healthier the grape.
Seedless white grapes

selectively bred for sweet-toothed shoppers are hugely popular – and while they're nutritionally imperfect, they have some value, especially if they're replacing ultra-processed sweet treats. "White seedless grapes contain some antioxidants, such as resveratrol," says GQ. This natural plant chemical can support heart health and slow the ageing process. "However, they’re relatively high in sugar, so keeping an eye on portion size can be beneficial." Swap to red-skinned grapes, and you'll instantly boost your antioxidant intake.


Chicken breasts veronique  Print Recipe

Serves: 4

Preparation time: 15 minutes

4 chicken breasts, boned, skinned
to taste salt and black pepper
2 tablespoons all purpose flour
4 tablespoons butter
2 cups dry white wine
2 tablespoons fresh lemon juice
2 tablespoons slivered almonds
1/2 pound seedless green , washed, stems removed, and halved lengthwise 1.Season the chicken breasts with a mixture of salt and pepper and flour.
2. Melt the butter in a sauté pan or heavy skillet over medium high heat. Add the chicken breasts and sauté for 2 to 3 minutes.
3. Add the wine and lemon juice, lower the heat, and simmer for 8 to 10 minutes, or until the breasts are tender. Add the almonds and for the last minute.
4. Transfer the chicken to individual plates and spoon the sauce and over each serving.

Pasta salad in parmesan baskets  Print Recipe

Serves: 4

Preparation time: 20 minutes

4 large green apples, peeled and diced
2 tablespoons lemon juice
2 cups apple cider
1 cup parmigiano-reggiano cheese, grated
2 cups shelled walnuts, 1 cup lightly toasted 1 cup ground fine
2 ounces balsamic vinegar
2 ounces olive oil
kosher salt
black pepper
1 pound arugula, washed and trimmed
1/2 pound red seedless
1/4 cup thinly sliced red onion, soaked in balsamic vinegar
1/2 pound orecciette or shells pasta, cooked, cooled and oiled
4 ounces gorgonzola cheese, crumbled Salad:
Set aside a little more than 1/2 of apples in bowl with water and lemon juice.
Place remaining apples in small saucepan with cider.
Bring to a boil. Reduce heat and simmer until apples are tender. Remove apples from heat, strain (reserving cider) and purée.

Dressing:
Combine 4 ounces of purée with oil and vinegar. Add salt, pepper and about 2 ounces reserved cider to taste.
Drain remaing apples and toss together with walnuts, pasta, , arugula, onions and dressing. Serve salad in baskets and top with gorgonzola.

Baskets:
Place a non-stick 9"sauté pan over low heat. Sprinkle bottom of pan with 1/4 cup Parmigiano to cover surface (cheese will melt), then with 1/4 cup ground walnuts.
When edges of crêpes are golden brown, peel away from pan with rubber spatula and invert slowly into 6-7" bowl to form basket.
If it tears, place back in pan with a bit more cheese to seal. Basket will crisp within seconds. Repeat to make 4 baskets.
