Grapefruit salad
A hamburger consists of a cooked patty of ground meat, seafood, or vegetarian foods, usually placed between two slices of a bread roll. Hamburgers are often served with lettuce, bacon, tomato, onion, pickles, cheese, and condiments such as mustard, mayonnaise, ketchup, and relish. There are many types of burgers with significant variations.

Blarney stone cookies  Print Recipe

Serves: 24

Preparation time: 20 minutes

Cooking time:16 minutes


2 cups powdered sugar
1 cup butter, softened
1 egg
1 1/2 teaspoons vanilla
2 1/4 cups all-purpose flour
2 egg yolks
2 tablespoons water
1 1/2 cups finely chopped dry roasted peanuts



Heat oven to 350°F. Combine powdered sugar, butter, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until light and fluffy (2 to 3 minutes). Reduce speed to low. Add flour; beat until well mixed (1 to 2 minutes).
Shape rounded teaspoonfuls of dough into 1-inch balls. Beat egg yolks and water with fork until well mixed in small bowl. Dip balls of dough into beaten egg yolks, then into peanuts. Place onto ungreased cookie sheets.
Bake for 12 to 16 minutes or until top springs back when touched lightly in center.

Curried chicken and rice salad  Print Recipe

Serves: 6

Preparation time: 30 minutes

Cooking time:40 minutes


1 cup sweetened shredded coconut
2 tablespoons canola oil
1 medium onion, finely chopped
1 tablespoon curry powder
1/2 teaspoon ground ginger
1 cup long grain white rice
1/2 teaspoon salt
1 1/2 pounds skinless, boneless chicken breast halves, cut into 1/2 inch dice
1 tablespoon minced garlic
2 medium celery ribs, finely diced
1 medium red pepper, cut into strips
1/2 cup dried currants
1 Granny Smith apple, diced
3/4 cup unsalted dry roasted peanuts, chopped
3 medium scallions, chopped

HONEY-MUSTARD VINAIGRETTE

Makes about 3/4 cup

1/4 cup red wine vinegar
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon minced garlic
6 tablespoons olive oil Preheat the oven to 350 degrees.
Spread the coconut on a small baking sheet and toast , stirring once or twice, until golden. Let cool.
Heat 2 teaspoons of the oil in a medium saucepan. Add half the onion and cook stirring, until softened. Add 2 teaspoons of the curry powder and the ginger and cook, stirring, for two minutes. Stir in the rice, 2 cups of water and the salt and bring to a boil.. Cover and cook over low heat until rice is tender.
Transfer to a bowl. Heat the remaining 1 tablespoon plus 1 teaspoon oil in a large skillet. Add the chicken and cook stirring occasionally, for 5 minutes. Add the garlic, the remaining chopped onion and 1 teaspoon curry powder and cook until chicken is cooked through. Add to the rice and let cool, tossing occasionally. Stir in the celery, bell pepper, currants and apple into the chicken and rice.
Add the Honey-Mustard Vinaigrette and toss to coat. Add the coconut, peanuts and scallions to the chicken salad and combine. Serve the salad with your favorite lettuce.

Honey-Mustard Vinaigrette:
Whisk the vinegar with the lemon juice, honey, mustard and garlic. Whisk in the oil and season with salt and pepper.

Grapefruit salad  Print Recipe

Serves: 4

Preparation time: 30 minutes


3 tablespoons fish sauce
3 tablespoons fresh lime juice
1 tablespoon brown sugar
1 large grapefruit (about 1 1/4 pounds) peeled, membrane removed, sectioned
2 tablespoons coarsely chopped peanuts
1 tablespoon finely chopped shallots
1 cup mint leaves, coarsely chopped
1 jalapeño pepper, finely chopped
bibb lettuce leaves, washed and dried In a small bowl, mix together the fish sauce, lime juice and sugar. Whisk to dissolve sugar. Set aside.
Peel and cut grapefruit into sections. Store in a bowl. When ready to serve, pour off juice that has accumulated at the bottom of the bowl; reserve for another use.
Add peanuts, shallot, mint and pepper to the grapefruit and toss to combine.
Drizzle the dressing over the top; toss to combine. Taste and if necessary, adjust the balance of salt, sweet and sour. Transfer to a plate lined with lettuce leaves. Serve immediately.

Green mango salad  Print Recipe

Serves: 4

Preparation time:15 minutes


¼ cup fresh lime juice
2 garlic cloves, minced
2 teaspoons sugar
2 Thai bird or other red chilies, chopped, or 2 teaspoons sriracha (Asian chili paste)
2 teaspoons soy sauce
1 teaspoon fish sauce
2 largesgreen mangoes (about 1 1/2 pounds), peeled and thinly sliced into julienne strips
2 tablespoons chopped cilantro
1/2 cup shredded fresh basil leaves, preferably Asian basil
1 teaspoon finely grated lime zest
2 tablespoons roasted peanuts In a small bowl, combine lime juice, garlic, sugar, chilies, soy sauce and fish sauce.

combine mangoes, cilantro, basil and lime zest in a mixing bowl. Add half the dressing and toss with peanuts. Add more dressing to taste and serve.

Kashmiri lamb curry  Print Recipe

Serves: 6

Preparation time: 20 minutes

Cooking time:2 hours


1 tablespoon olive oil
2 pounds lamb shoulder, cubed
1 large onion, chopped
2 tablespoons hot curry paste
1 (14-ounce can) coconut milk
2 tablespoons tomato sauce
1/2 cup raisins
1/2 cup chopped peanuts
1/2 cup cubed bananas
Serve with rice and curry Heat oil in an oven-proof skillet and brown lamb and onion on high heat.
Stir in curry paste, coconut milk, and tomato sauce. Add water to cover meat. Simmer on low for 1 1/2 hours. Add remaining ingredients.
Simmer until lamb is tender.
Serve with rice and chutney.

Peanut butter and mint chocolate chips  Print Recipe

Serves: 12

1 cup crunchy peanut butter
1/2 cup shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs, beaten
2 cups all-purpose flour
2 teaspoons baking soda
1 cup mint chocolate chips Preheat oven to 350 degrees.
In the bowl of an electric mixer, cream peanut butter with shortening. Add sugars gradually, beating until light and fluffy. Add beaten eggs.
Gradually add the combined flour and baking soda and mix well. Stir in the mint chocolate chips.
Using tablespoonfuls of the dough place on a cookie sheet.
Flatten with a fork to form a round cookie about 2-inch round.
Bake for about 12 minutes or until golden brown.

Peanut crisps  Print Recipe

Serves: 12

Preparation time: 10 minutes

1 cup unsalted dry-roasted peanuts ( 5 ounces)
1 stick ( 4 ounces) butter
3/4 cup sugar
1 egg, lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
4 ounces bittersweet chocolate, melted and cooled Preheat oven to 375 degrees.
In a food processor, pulse the peanuts until finely ground.
In a large bowl, beat the butter and sugar together until fluffy. Beat in the egg well.
Stir in the ground peanuts, then stir in the flour and baking powder until just combined.
Drop heaping spoons of the batter about 2 inches apart on large ungreased cookie sheets. Bake the cookies, 1 sheet at a time, for about 8 minutes, until golden brown.
Let the cookies cool on the sheets for 2 minutes, then transfer them to a rack to cool completely.
Drizzle the melted chocolate over the cooled cookies. Refrigerate until ready to serve.
