PINEAPPLE
The pineapple, known scientifically as Ananas comosus, is a tropical fruit with a unique combination of sweetness and tartness. Here are some interesting tidbits about this delicious fruit:
Origins: Pineapples are believed to have originated in South America, specifically in the region that is now Brazil and Paraguay.
Name: The name "pineapple" was given by European explorers because it resembles a pine cone. In many languages, such as Spanish (piña) and French (ananas), it’s called by names derived from the Tupi word "nanas," meaning "excellent fruit."
Cultivation: Pineapples grow on a low, bushy plant, with the fruit developing at the center. It takes around 18-24 months for a pineapple to mature.
Symbol of Hospitality: In colonial America, pineapples were a symbol of hospitality and welcome, often used as a centerpiece

Asian shrimp with pineapple relish  Print Recipe

Serves: 6

Preparation time:15 minutes

Cooking time:10 minutes

The shrimps tails hanging out of the crispy wonton wrappers make perfect hand hold which make them great finger food at parties!

Oil for deep-frying
12 large shrimp, peeled with tails left on, deveined
1/4 cup Thai chili-garlic sauce
12 egg roll wrappers, cut in half into 2 triangles
2 tablespoons water
2 teaspoons cornstarch
1 cup pineapple, cut into a small dice
1/2 red pepper, cut into a small dice
1/2 bunch fresh cilantro, chopped
1/4 cup olive oil
Juice of 1 lime
2 green onions, washed, ends removed, chopped

Pour the oil 2 inches deep in a large pot. Heat it to 350 degrees.

Make four slits width-wise across each shrimp belly to keep the
shrimp from curling as they cook. Place the shrimp in a bowl and toss
them with the chili-garlic sauce.
Shake any excess marinade off of the shrimp, wrap them in the egg roll wrappers leaving the tails out and seal the wrapper and seal the wrapper with a mixture of the water and the cornstarch. Set aside.

In a small skillet, combine the pineapple, red pepper, cilantro,
olive oil, lime juice and green onions. Warm over low heat.
Fry the shrimp in small batches in oil over medium-high heat until golden brown, crispy and cooked through, about 2-3 minutes and set aside on paper towels to drain.
Serve with the relish.

Classic carrot pineapple muffins  Print Recipe

Serves: 12

Preparation time: 20 minutes

Cooking time:25 minutes


1 1/4 cups 100% bran cereal
1 can crushed pineapple (14 oz) in juice
1/4 cup milk
1 egg
1/2 cup packed brown sugar
1/3 cup vegetable oil
1 cup shredded carrots
2 cups flour
1 tablespoon baking powder
2 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1 teaspoon salt
1/2 cup raisins Preheat oven to 400 degrees.
Combine cereal, undrained pineapple, and milk. Let stand 5 minutes. Stir in egg, brown sugar, oil and carrots.
In large bowl, mix flour, baking powder, cinnamon, ginger and salt.
Add cereal mix and raisins to dry ingredients stirring just until moist. Fill each muffin cup generously to the top.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Transfer muffins on a rack to cool.

Fruit sorbet  Print Recipe

Serves: 8

Preparation time: 1 hour

Cooking time:10 minutes


2 cups water
10 ounces sugar
1 ounce lemon juice
2 cups fruit pulp and juice (apricot, kumquat, lemon, orange, peaches, pears, pineapple, raspberry, strawberries, tangerine)

In a medium saucepan, combine the water and sugar. Bring to a boil. Add lemon juice and fruit pulp.
Refrigerate until cold. Churn in an ice-cream machine.
